A Refreshing Gin Cocktail
There’s just something about warmer weather that makes a midday or evening cocktail sound oh-so appealing—as Aussies an afternoon cocktail is a way of life. Guests at our Moore House properties get our white glove service; with an option to have a bartender for the evening mixing up custom cocktails. So we’d like to think at this point, we’re pretty damn good at it.
We made this cocktail for one of our dinner series meals and guests raved over it. It contains a secret ingredient: egg white! Before you brush off the recipe, know that egg whites don’t impart any smell or taste to the drink, but it does help to balance the bright, lemon flavors and creates a rich frothy texture. It adds a very elegant look and mouth feel to the cocktail along with a foamy head that was made for a pretty garnish.
Here’s how to make it at home:
Corran’s Sunday Sage
Ingredients
2 oz of Hendrick’s Gin (we love its cucumber and rose notes)
1/2 oz. of honey syrup
3/4 oz. freshly-squeezed Meyer lemon juice
1 farm fresh egg white
1 dash of black walnut bitters
1 sage leaf
1 preserved slice of lemon
Step one
Start by making the honey syrup. In a small pot, slowly heat one cup of water and a half cup of honey until combined. Let it cool to room temperature. Extra can keep for up to a week or two in the fridge.

Pour gin, honey syrup, lemon juice, egg white, bitters, and a preserved lemon into a cocktail shaker. (We use the Sunday Suppers recipe for preserving lemons) Give it a dry shake first sans ice until you feel the pressure build in the shaker.
step three
Unseal the shaker, add ice and shake again to cool down the cocktail. Strain into a cocktail glass* and garnish with a sage leaf. Before you place the sage on top, place the leaf in the palm of one hand and use your other hand to slap the leaf. It releases the flavor without bruising the herb.
