Moore House Dinner Series: Land

One of our favorite things to do at our Moore House cottages is host dinners that bring together the local community. We got our start with the Sunday Suppers dinner series in 2019 and this year we hosted a two-night series called Land/Sea. We wanted it to feel completely different—to challenge ourselves to dream up something new. Given our passion for sustainability, which is one of the core values of our business, we thought it would be nice to create an homage to the land and sea. We knew immediately that we wanted to work with local businesses and harvest our materials from some of our properties. We started with a mood board and saw neutral colors and lots of texture repeat over and over again, but we added warmth through warm metallic finishes and plenty of candlelight.

We really wanted to evoke the feeling of the harvest without being too literal. Bringing in warmth and a feeling of abundance, but in a less traditional sense. We filled the dining room of the Quonset Hut with bundles of dried grasses and we hung woven sections over the table to create the feeling that guests were dining inside of a harvest basket. The center of the table was piled high with baskets of potatoes, garlic, and onions, all atop a raw burlap tablecloth. Even the menu was printed on seeded paper that guests could take home and plant.

The menu that evening was a beautiful collaboration between Gnarly Farms and Stoneacre Brasserie. To start we had passed canapes like Bo Ssam-style pork belly with yuzu kosho, Johnny cakes with heirloom squash and sunflower butter, and head cheese torchon with celery root and black truffle. For dinner, guests started with a cauliflower soup with black truffles, then enjoy twice baked fingerling potatoes with créme fraîche and hackleback caviar, a sweet potato cavatelli, and bone-in pork chops with miso glazed brussel sprouts and radish. The desserts were served family style: an artisanal selection of cheeses, triple chocolate trifle, and petit fours.

We also worked with talented locals to pull the whole thing together!
